"Side Dish"

Honey Glazed Carrots

1 pound carrots cut
1/2 cup water
1 tablespoon butter
1/2 cup honey
1/4 cup brown sugar
1/2 teaspoon grated nutmeg
1 teaspoon ground cinnamon

1.Place carrots and water in a sausepan, bring to a boil, cover and cook for 3-4 minutes.
2.Drain water add butter and simmer for 1-2 minutes
3.Add honney, brown sugar,nutmeg and cinnamon. Mix and continue cooking,stirring frequently,for 3 minutes,or until the carrots are tender.

"Sweet, Sharp Shock"

The taste tingling combination of sweet red grape and tart apple is quite
delicious.
1/1/4 cups red grapes
1 red skinned apple
1 small cooking apple
crushed ice

Makes 1 large glass:
Slice apples and push grapes and apples through a juicer.
Pour over ice.
For more refreshing drink, add mineral water.

"From Eve With Love"

Apple Strudel

3 large cooking apples ( Granny Smith or Fuji) , peeled and thinly sliced
1/2 cup sugar or Splenda
1/2 cup raisins
1/2 cup chopped walnuts
1/2 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup dried bread crumbs, divided
1/2 pound Phyllo dough
1/2 cup butter, melted
Powdered sugar

1. Preheat oven to 375 F.
2. grease a large cookie sheet
3. In large bowl toss apples with sugar, raisins, walnuts, cinnamon, salt, and 1/4 cup bread crumbs.
5. Take phyllo to make a 12 by 16 inch rectangle, brushing sheets with melted butter and sprinkle with tablespoon of bread crumbs. Repeat, brushing each layer with butter and crumbs.
6. Spoon apple mixture to cover about 1/2 of the rectangle. Roll up jelly roll fashion.
Place on the cookie sheet seam side down. Brush with melted butter.
7. Bake for about 40 minutes, or until golden.
Cool and serve with powdered sugar or serve it warm with Vanilla ice cream.

"Ready For The Sandwich"

Turky, Spicy Mayo and Avocado Sandwich

2 slice whole grain bread..I like "La Brea Bakery"
4 ounces Turky or smoked Ham
1/2 Avocado
1 tablespoon arugula

Spicy Mayo
2 garlic cloves
 1 7 ounce can chipotle peppers in adobo sauce
1/4 cup chopped cilantro
Juice from 1 lime
4 cups mayonnaise
Combine garlic, chipotles, cilantro and lime juice until smooth. Mix in mayonnaise.
Spread 2 tablespoons of spicy mayo on one side of bread slices. fold the Turky or Ham and layer across one of the bread slices. Slice the avocado and spread across the turky. Top with arugula and the second slice of bread.

"To The Grill"

Grilled Pepper Salad
2 red bell peppers
2 yellow or orange peppers
2 green bell peppers
Dressing:
1 garlic clove,chopped
1/2 teaspoon salt or more for taste
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
1 tablespoon olive oil
2 tablespoons chopped fresh parsley
2 tablespoons slivered fresh Basil

Grill peppers until the skin are charred on all sides.
Let  cool than scrape the burnt skin off the peppers and cut the peppers into quarters
or strips. Arange on a platers.
Stir the dressing and spoon it over the peppers.

"Ready For The Bruschetta"

SOLD
 Italian Bruschetta:
Extra virgin olive oil
6 1/2 inch thick diagonal slice of Italian or other crusty bread
1 garlic clove,cut in half

For the topping:
1 pound large round tomatoes, cored, seeded and chopped
2 ounce crumbled Feta cheese
2 tablespoons balsamic vineger
2 tablespoons extra virgin olive oil
2 tablespoons chopped Italian paarsley
2 tablespoons chopped fresh basil
1 garlic clove minced
Salt and freshly ground black pepper

1. Preheat broiler or grill.
2. Brush olive oil on one side of bread. Place under the broiler until toasted and brown. Remove from oven.
Brush the other side and repeat broilling procedure.
3. Combine topping ingredients in a small bowl . Mix to blend well..
4. To serve, rub garlic clove on bread slices and top with tomato mixture.

"Carrots for The Cake"

EZ Carrot Cake
1 package spice cake mix 2 layer size
2 cups grated carrots about 1/2 pound
1 8-ounce can crushed pineapple, drained
1 cup chopped pecans, divided
2 8 - ounce package cream cheese, softened
2 cups confectioners sugar or Splenda
1 8-ounce whipped desert topping

Preheat oven to 350 F
Prepare cake mix as directed on package, stirring carrots, pineapple, 3/4 cup peacans until well blended. Pour into 2 prepared 9-inch round baking pans. Bake for 25-30 minutes. Cool!
Beat cream cheese and sugar with electric mixer stir in whipped topping until well blended.
Place 1 cake layer spread with 1 1/2 cups of cream cheese mixture. Place 2nd cake on top and frost top and sides with the remaining cream cheese mixture. Garnish with remaining 1/4 pecans.
