Turky, Spicy Mayo and Avocado Sandwich
2 slice whole grain bread..I like "La Brea Bakery"
4 ounces Turky or smoked Ham
1/2 Avocado
1 tablespoon arugula
Spicy Mayo
2 garlic cloves
1 7 ounce can chipotle peppers in adobo sauce
1/4 cup chopped cilantro
Juice from 1 lime
4 cups mayonnaise
Combine garlic, chipotles, cilantro and lime juice until smooth. Mix in mayonnaise.
Spread 2 tablespoons of spicy mayo on one side of bread slices. fold the Turky or Ham and layer across one of the bread slices. Slice the avocado and spread across the turky. Top with arugula and the second slice of bread.
